Cook & Store Large Batches Without Worries

What do you do with large batches of sauces? Are your storage methods sanitary? Does the colour and flavour re4main the same the next day? If you are like most restaurants, you probably cook large batches of sauces or other items and simply place them on the makeline and toss them in the cooler for use the next day. If you do not properly store food from hot to cold you could be flirting with disaster. One sick customer or one bad tasting meal could lose you thousands of dollars in business and even bad press.

Most operators think that proper cook/chill systems are either out of their price range or aren’t suitable for their operations, but Harald Hendriks, Managing Director of Pansaver Cook & Chill has developed the perfect product. Pansaver Cook & Chill is proud to launch the new line in Australia. “We are pleased to be able to offer the much less expensive option of the manually operated system,” he said. The highly effective cook/chill system that has been utilized by large industrial kitchens for many years has now come within reach of smaller operations with the launch of Australia’s first manual system, Pansaver’s Cook & Chill. The Cook & Chill system enables high volumes of food to be cooked to perfection and then rapidly chilled which guarantees freshness, quality, safety and consistency.

C+C prepared foods have the taste, texture, colour, and aromas of freshly prepared menu items. Centralized purchasing, ingredient preparation and production ensures consistent food quality. Refrigerated –NOT FROZEN – storage maintains cellular structure…the texture and consistency of food. By not freezing foods, you eliminate that ‘mushy’ texture and flavour variances that comes from improperly storing food.

The first part of the system is to rapidly chill cooked food through methods such as an ice water bath or by blast chiller. This arrests the cooking process so that food remains “just done”. Rapid chilling also ensures a more hygienic product as time spent in the “Danger Zone”, (between 5° and 60° C) is greatly reduced, which complies with HACCP guidelines. This in turn equates to a longer refrigerated shelf life of the food product and the ability to create a food bank, as refrigerated shelf life is extended to up to 28 days or more, depending on the holding temperature and the rate of rapid chilling. C+C systems (manual or automated) are used primarily for soups and sauces facilitating food on demand (creating an actual fresh food bank) vs prepare and serve.

Building a food bank provides the opportunity for centralized cooking, as staple menu items can be cooked in one location and then transported to other outlets. A food bank ensures consistency from unit to unit and from one day to the next.

Cook & Chill (C+C) Kettle Pump Casings are ideally suited for implementation of HACCP food safety programs. Products are packed hot at pasteurized temperatures into clean casings.

C+C Kettle Pump Casings are durable. Once closed and chilled, the product can then be reheated either in or out of the casing according to the recipe.

Primary food production hours are decreased. This saves money. Fewer highly trained employees are needed. This saves money. A “finished”inventory of 4-7 ltr casings can reduce loss from theft and reduce waste from preparing too much food for daily needs. This saves money.

“The savings are huge for small to medium sized operations as the manual system can be purchased for around 7% of the cost of a fully automated system,” Harald said. “This saving is on equipment costs alone, so when you also consider there is no need to remodel the kitchen to install it, the savings increase dramatically.”

Costs are then quickly recouped through decreased food waste and reduced labour costs. There is also the peace of mind that comes with the manual packing and sealing system of Pansaver’s Cook & Chill, that is all certain, all hygienic, all of the time”, said Mr Hendriks.

Consistent and Faster Pizza Bases with Less Labour

From the smallest shop to the largest chain, one of the most labour intensive and dreaded tasks of the day is preparing the pizza bases. Rounding and stretching dough by hand is not only time consuming (and time is money), but also the most inconsistent process there is. Friul has a solution with the M44 combination divider/rounder.
