Arriva Has Arrived

Mark Paterno opened Arriva five and a half
years ago in Brisbane. When creating new
recipes and pizzas, he credits many of his
creations to his mum, but seasonal produce and his
experiences in Italy, (where combinations of certain
foods are very strict),simplicity and quality are also
major contributors to new and exciting combinations.
"New availability of Italian products in Australia
has been an added addition to the way we develop
new pizzas," Mark said. "But when we actually start
decising on what we will add to the menu welove to
involve, not only the staff, but the customers as well
into the 'why' and ‘how' of every ingredient."
Mark said he has learned a few valuable lessons in
the five years he has been a pizza shop owner. "If I
could go back and change any one thing it would be
the kitchen," Mark said. "We have totally outgrown
the one we have.
